5、res1.2.1 水源Water Source工廠采用自來(lái)水作為加工用水,水源充足。All water used in the plant is from the municipal water system. The water supply is quite sufficient.1.2.2 設(shè)施Facilities 加工用水管道與非加工用水管道設(shè)置合理,避免相互交叉,并且標(biāo)識(shí)區(qū)分清楚。加工用水管道采用不生銹的PPR軟管。軟水管使用完畢后不能落地,Portable water lines and non-portable lines are reasonably designed to a
6、void cross-contamination, and labeled clearly. All portable water pipes are made from stainless PPR hoses. 車間地面有斜度,利于廢水的排出。Floors are sloped to facilitate drainage.1.2.3 操作要求 工廠繪制了供、排水網(wǎng)絡(luò)圖,對(duì)出水點(diǎn)進(jìn)行統(tǒng)一編號(hào)。有利于對(duì)加工用水進(jìn)行控制。The plant has made a water supply & drain net diagram to list every water outlet and

Itll facilitate the control of processing water.加工車間污水排放暢通、操作規(guī)范,使污水不能濺到加工容器及產(chǎn)品上。 污水排放由車間統(tǒng)一管理,衛(wèi)生班具體實(shí)施。Hygiene departments are in responsible to the water drainage management. 盛水容器有標(biāo)識(shí),做到容器專用。All the containers are properly labeled, and specially used. 消毒藥物使用按有關(guān)規(guī)定嚴(yán)格防止對(duì)加工用水(冰)造成污染。Sanitize
8、rs are controlled strictly according to related requirements to prevent contaminating processing water (ice). 加工用冰全部由生活用水制成。制冰水有專用出水口,使用經(jīng)清洗消毒的車輛運(yùn)送,制冰設(shè)備和盛裝冰塊的器具,必須保持良好的清潔衛(wèi)生狀況,冰的存放、粉碎、運(yùn)輸、盛裝貯存等都必須在衛(wèi)生條件下進(jìn)行,防止與地面接觸造成污染。All the processing ice is made of portable water from special water outlet and transpo
9、rted by sanitizing vehicle. The ice-maker and containers are kept in good hygiene condition. The storage, breakage, transport of ice is handled in good hygiene condition. And specially, measures should be taken to prevent ice contacting the ground and being contaminated.1.3 監(jiān)控措施 Monitoring Procedure
10、s 每年兩次和在供水系統(tǒng)改變時(shí),工廠會(huì)取樣送山東檢測(cè)有限公司按照GB5749-2006生活飲用水衛(wèi)生標(biāo)準(zhǔn)的要求進(jìn)行檢測(cè)。Twice a year, and when modifications are made to the plumbing system, a water sample of the plant will be sent to Shandong Test co. ltd to examine the items requested by GB5749-2006<Standard for drinking water quality>. 工廠化驗(yàn)室每周一次檢測(cè)加工用
11、水(冰)微生物指標(biāo)(細(xì)菌總數(shù)、總大腸菌群、耐熱大腸菌群、大腸埃希氏桿菌 參照),填寫水質(zhì)微生物檢驗(yàn)記錄。The plant lab will test the water once a week for microbes, including the total plate count, total coliforms, thermotolerant coliforms, E.coli, etc, and records the results on < Bacteria test record in water >. 化驗(yàn)室每天檢測(cè)加工用水余氯,根據(jù)不同水籠頭的編號(hào)進(jìn)行扦樣檢測(cè),
12、檢測(cè)結(jié)果記錄在水質(zhì)余氯原始記錄。The plant lab will use residual chlorine test instrument to test the concentration of the chlorine daily in the water outlet, and the results will be recorded on < Test record of residual Chlorine in water>. 維修部對(duì)加工用水及非加工用水管道每年進(jìn)行一次定期檢查。對(duì)維修后的管道,在加工使用前進(jìn)行微生物檢測(cè)并記錄在案。The mainten
13、ance department will routinely check the portable and non-portable water lines every year. The maintained pipelines can be used only when they pass the microbiology examination. 每日加工過(guò)程中都要對(duì)加工區(qū)域地面進(jìn)行檢查,確保排水順暢。Processing area floors are inspected daily during production for adequate drainage. 所有的報(bào)告要經(jīng)過(guò)質(zhì)量
14、保證主管的審查。The quality assurance supervisor receives and reviews all the reports. 1.4 糾偏措施Corrective Actions 如果自來(lái)水水質(zhì)檢測(cè)出現(xiàn)不合格,工廠將立即停止生產(chǎn),查找不合格原因,封存所有產(chǎn)品直到產(chǎn)品安全得到保證。只有等水質(zhì)滿足要求才能恢復(fù)生產(chǎn)。In the event of city water quality test failure, the plant will stop production, determine when the failure occurred, and embarg
15、o all products produced during the failure until product safety can be assured. Production will resume only when water meets the standards. 如果廠內(nèi)水質(zhì)檢測(cè)發(fā)現(xiàn)微生物超標(biāo),工廠將會(huì)聯(lián)系自來(lái)水廠并檢查供水系統(tǒng),查找問(wèn)題的來(lái)源。封存產(chǎn)品指導(dǎo)水質(zhì)滿足要求。If in-plant sampling indicates the amount of microbiology exceeds standards, the plant will contact the c
16、ity water system and inspect the plumbing system to determine the source of the problems. Production will resume only when water meets the standards. 如果地面積水,將清理地漏,確保流水通常;如果必要,將聯(lián)系管道工程承包商,采取措施糾正排水問(wèn)題。Floors with standing water will have the drains unplugged, or, if necessary, consultations will be held

18、面的狀況和清潔,包括工器具、手套、工作服CONDITION AND CLEANLINESS OF FOOD CONTACT SURFACES,INCLUDING UTENSILS, GLOVES AND OUTER GARMENTS=2.1 目的Objectives保持食品接觸面的衛(wèi)生,對(duì)食品不造成污染。Keep food contact surfaces clean, prevent contamination to food.2.2 控制措施Control Measures 對(duì)與食品直接接觸的材料要求如下:Food contact material requires as follows:
19、a:易清洗,無(wú)毒、無(wú)吸水性、不易碎、不生銹、不使食品表面著色、耐腐蝕、耐磨;不使用鐵制、竹木制品;Easy cleaning, poisonless, waterproof, unbreakable, stainless, non-fading, corrosion resisting, abrasion resisting; Iron, bamboo and wood products can not be used in the workshops, ;b:機(jī)器設(shè)備要求焊接光滑,有利于拆裝;Machines should have smooth welds, and easy to dis
20、mantle and install. 車間內(nèi)的清洗和消毒根據(jù)附錄3車間清洗和消毒計(jì)劃執(zhí)行。Clean and sanitization should be performed according to appendix 3< Cleaning and sanitizing plan in the workshop>. 車間清洗消毒使用公司批準(zhǔn)使用的化合物。不經(jīng)過(guò)批準(zhǔn)的不得使用。Chemical compounds intended to be used in the workshop should be approved. No compounds that are not ap
21、proved could be used in the workshop. 機(jī)械設(shè)備能拆卸的部分要分開清洗,并用消毒液浸泡或噴灑,使用時(shí)再清洗干凈,要特別注意機(jī)械底部清掃消毒。Machines easy to be dismantled should be dismantled to clean and sanitize. Especially, the bottom of machines should be adequately cleaned and sanitized. 內(nèi)包裝物料運(yùn)進(jìn)車間的同時(shí)應(yīng)去掉外包裝,在使用過(guò)程中應(yīng)置于固定案面上,單獨(dú)放置。當(dāng)天未使用完的內(nèi)包裝應(yīng)包裝好后再入庫(kù)。
22、Inner package materials should be unpacked when entering the workshop, put on a fixed special desk. Unused inner package material should be repacked before returning to the stockroom. 運(yùn)輸車輛到廠后,首先檢查車廂的異味、消毒、溫度(-18)、箱號(hào)、鉛封號(hào)、車號(hào)、蟲害等情況。When transport vehicles arrive, the sanitation condition should be insp
23、ected first.工作服由洗衣房統(tǒng)一清洗消毒,每周清洗消毒兩次,不同清潔區(qū)域的工作服分別清洗消毒,清潔工作服與臟工作服分區(qū)域放置。Work clothes are differently laundered and sanitized twice a week according to different processing areas, and are kept in different places. 所有進(jìn)入車間的員工都需要帶發(fā)網(wǎng)、口罩、工作服、水鞋進(jìn)入車間。All workers are required to wear hair nets, masks,work clothe
24、s, and waterproof boots to go into the workshops. 1.3 監(jiān)控措施 Monitoring Procedures 衛(wèi)生班成員和班長(zhǎng)負(fù)責(zé)清洗和消毒工作的執(zhí)行和監(jiān)督。A cleanup crew and supervisor are identified for daily sanitation. 包裝材料和輔料的監(jiān)控按照包裝輔料驗(yàn)收標(biāo)準(zhǔn)操作程序執(zhí)行。Package and auxiliary materials are monitored according to <Package and auxiliary materials accept
25、ance standard operational procedures>.Appropriate signage warns employees to wash hands before returning to work. 衛(wèi)生班長(zhǎng)檢查食品接觸面的清潔程度,總質(zhì)檢查手套和工作服是否清潔。The sanitation supervisor inspects food-contact surfaces to determine if they are adequately cleanable and are clean and sanitized before processing be
26、gins and after each clean-up period. Production supervisors monitor the use of gloves and the cleanliness of workers outer garments. 化驗(yàn)室每季度檢測(cè)車間和更衣室的空氣落菌數(shù),驗(yàn)證臭氧發(fā)生器的效果。The plant lab will test the total plate count in the air of the workshop and change rooms to verify the effect of the ozone generators.
27、1.4 糾偏措施Corrective Actions 食品接觸面不容易清潔的要進(jìn)行維修或者更換,不夠干凈的要重新進(jìn)行清洗,F(xiàn)ood-contact surfaces that are not adequately cleanable are repaired or replaced. Food-contact surfaces that are not clean are recleaned. 如消毒液濃度偏離極限值,衛(wèi)生班將停止工人進(jìn)入車間生產(chǎn),達(dá)到要求后,方可進(jìn)入車間。The concentration of the sanitizers that is not tested right
28、should be reprepared.1.5 記錄保持Record Keeping 所有的衛(wèi)生檢測(cè)記錄應(yīng)當(dāng)在公司的SSOP檔案中保存2年。All sanitation inspection sheets and other records are kept in the company SSOP file for 2 years.=3. 防止交叉污染PREVENTION OF CROSS CONTAMINATION=3.1 目的Objectives防止加工過(guò)程中的交叉污染Prevent cross contamination in the course of work.3.2 控制措施Co
29、ntrol Measures3.2.1 進(jìn)入車間的生產(chǎn)管理人員和工人受到基本的食品衛(wèi)生培訓(xùn)。工人進(jìn)車間要穿好工作服,帶好工作帽、口罩、頭發(fā)不外露,不擦化妝品、香水、須后水,不佩帶首飾(客戶可以戴結(jié)婚戒指,但必須戴手套),不留長(zhǎng)指甲,不染指甲,不作其它修飾,嚴(yán)禁涂抹藥物的人進(jìn)入車間,嚴(yán)禁帶食物等個(gè)人物品進(jìn)入車間,出車間時(shí)必須換下工作服,由車間門口的衛(wèi)生人員負(fù)責(zé)監(jiān)督檢查。Workers and production supervisors have received basic food sanitation training. Workers that entering the workshop
30、 wear work clothes, caps, masks to keep all hair covered, and do not wear makeup, perfume, jewelry (Costumers can wear their wedding rings to enter the workshop, but they have to wear gloves) or other objects that might fall into the product. Workers should not have long finger nails, and could not
31、go into the workshop with colored nails. Workers could not go into the workshop with any ointment on their skin. Clothing and personal belongings are not stored in production areas. And work clothes must be changed when going out of the workshop, and it will be supervised by the doorperson. 3.2.2 工人
32、進(jìn)車間應(yīng)先換拖鞋,將個(gè)人衣物掛在衣架上,再穿工作服。程序:戴口罩戴內(nèi)帽(發(fā)網(wǎng))戴外帽穿上衣穿褲子穿靴子各類人員工作服、帽子顏色規(guī)定(見附表1)注意:a穿褲子時(shí)防止褲腳落地;b口罩應(yīng)遮住口鼻,不可戴在鼻子下面;c應(yīng)系好上衣,個(gè)人衣物不得露在外邊;d 加工大樓內(nèi)嚴(yán)禁吃東西、嚼口香糖、喝啤酒或吸煙。Workers that are entering the workshop should change their shoes into slippers first, and then put their personal clothes on the hangers and wear the wor
33、k clothes.Work clothes wearing sequence: MaskInner cap (hairnet) CapWork shirtWork trousersboots.Workers of different processing areas wear work clothes of different color (see Appendix 1).Notes: a. avoid the trousers legs contacting the ground when changing work trousers; b. Masks should keep their
34、 nose and mouth completely covered and could not just cover their mouth; c. tie the work clothes and keep all personal clothes covered; d. workers do not eat food, chew gum, drink beverages, or use tobacco in production building.3.2.3 工人進(jìn)入車間之前和被污染了之后要洗手消毒,程序是清水沖洗皂液搓洗清水沖洗消毒(50PPM次氯酸鈉溶液,30s)清水沖洗;Works
35、 should wash their hands thoroughly and sanitize them before entering the workshop and anytime they have become soiled or contaminated. The procedure is: rinsing with clean waterrubbing with soaprinsing with clean watersanitizing (soaking in 50PPM sodium hypochlorite for 30s) rinsing with clean wate
36、r;3.2.4 進(jìn)入車間之前工人要對(duì)水鞋進(jìn)行消毒,趟過(guò)300PPM次氯酸鈉溶液的鞋靴池。加工過(guò)程中消毒液每4小時(shí)一換。Workers sanitize their boots in boot baths containing 300PPM sodium hypochlorite solution before entering the workshop. Boot sanitizing solutions are changed every 4 hours during production. 3.2.5 車間人員上廁所時(shí),應(yīng)脫下工作服,摘下工作帽,穿廁所專用拖鞋入內(nèi),便后沖廁,用洗滌劑洗手,
37、在消毒液中浸泡30秒,沖手,吹干,方可穿工作服。Workers using toilet procedure: take off all work clothes including caps and hairnets, put on toilet slippers to go into the toilet; after using the toilet, flush the toilet and wash their hands the same way as they entering the workshop, and then put on their work clothes in
38、 sequence.3.2.6 廁所拖鞋放置在廁所門口,不與其它拖鞋混放或混用。Put the toilet slippers at the gate of the toilet, not mixed up with other ones.3.2.7 操作人員的工作服、帽子每周更換兩次,必要時(shí)增加更換次數(shù)。由衛(wèi)生監(jiān)督員統(tǒng)一收發(fā),洗衣房人員集中洗凈消毒。Working clothes are changed twice every week and changed as needed. The sanitization supervisor collects the working clothe
39、s and sends to the laundry to wash and sanitize.3.2.8 乳膠手套使用后必須清洗消毒后放在指定地點(diǎn)。Rubber gloves should be washed and sanitized and put on the designated spot after use. 3.2.9 加工車間內(nèi)清潔區(qū)、準(zhǔn)清潔區(qū)、一般清潔區(qū)的劃分:清潔區(qū):精加工生產(chǎn)線、包裝生產(chǎn)線所在區(qū)域;準(zhǔn)清潔區(qū):粗加工生產(chǎn)線所在區(qū)域;一般清潔區(qū):各貯藏室。不同清潔區(qū)域的的用具不能混用,且必須分別清洗。不同清潔區(qū)域的工人不得串崗。The processing workshop
40、is divided to clean area and nearly clean area and general clean area:Clean area: fine processing line and packing processing line area;Nearly clean area: rough processing line area;General clean area: every stockroom.Tools and utensils in different areas cant be used alternately and should be clean
41、ed separately. Workers are not allowed to enter or pass through other processing areas.3.2.10 原料綠色筐、下腳料白色地筐、半成品和成品黃色筐、包裝工序藍(lán)色周轉(zhuǎn)筐等用具都有明顯標(biāo)記:加工過(guò)程中,所有容器每循環(huán)使用一次必須清洗消毒。清洗原料筐用紅刷、清洗成品/半成品用白刷、清洗下腳料筐用藍(lán)刷。Baskets are color-coded for specific products: green for raw material, white for wastes, yellow for semi-fin
42、ished products and finial products, and blue for packing products. Baskets should be cleaned and sanitized every cycle use. Basket brushes are color-coded too, red for raw material baskets, white for finial semi-finished products baskets and blue for waste baskets.3.2.11 車間內(nèi)各種加工器具不直接接觸地面。Processing
43、utensils should not contact the ground directly.3.2.12 落地產(chǎn)品設(shè)落地產(chǎn)品專用容器,單獨(dú)存放。Theres special utensil for products falling down to the ground.3.2.13 不得打開未安裝紗窗、紗網(wǎng)的窗戶(包括車間、廁所和廠區(qū))。Do not open windows without net curtains (including the workshops, toilets and other plant areas).3.2.14 原料、成品、輔料分庫(kù)存放,有單獨(dú)的出入口。原料
44、、半成品或成品通過(guò)各工作間的窗口傳遞。Raw materials, finial products, and auxiliary materials are stored in different stockrooms which have individual exits and entrances. Raw materials, finial products and auxiliary materials pass through special windows between every working room.3.2.15 工人每周必須洗澡兩次。Workers should bat
45、he twice every week.3.2.16 運(yùn)送成品、下腳料、原料的鏟車、電梯不可混用。電梯每周一次清洗消毒。Fork lifts and elevators transporting finial products, fish wastes and raw materials should not mix. Elevators should be cleaned and sanitized once a week.3.2.17 物料庫(kù)、冷庫(kù)均須每日清掃一次,并保持干凈。物料庫(kù)每月消毒一次,冷庫(kù)每半年消毒一次,每月除霜一次。Once a day, the material stock
46、rooms and cold storages should be cleaned and keep tidy. Material stockrooms should be sanitized every month, and cold storages should be sanitized once a half year and defrosted every month.3.2.18 車間內(nèi)玻璃制品和硬塑料制品的管理Control management of Glassware and duroplasts in the workshop在加工和包裝區(qū)域使用的燈具為安全型的。Safet
47、y-type light fixtures are used in processing and packaging areas.A清掃 Cleaning玻璃和硬塑料制品的清掃、消毒必須在下班后,嚴(yán)格按SSOP的規(guī)定執(zhí)行。清洗、消毒,清掃消毒過(guò)程中應(yīng)避免強(qiáng)力沖撞被清掃消毒的玻璃及硬塑料制品。清掃、消毒的玻璃及硬塑料制品應(yīng)由衛(wèi)生班專人負(fù)責(zé)檢查無(wú)損后方可投入使用。Glassware should be cleaned and sanitized after the shift, strictly according to the requirements of SSOP. While doing
48、this, take good care to avoid break glassware or duroplasts. The cleanup crew should check and confirm all the glassware and duroplasts are in good condition after cleaning.B更換、維修 Changing and maintenance在玻璃、塑料制品損壞后,應(yīng)填寫記錄表并告知?jiǎng)恿υO(shè)備部,通知維修人員進(jìn)行更換。When glassware or duroplasts are found broken, the cleanup
49、 supervisor should inform the Power and Equipment Department to repair.如系燈管不亮而非爆裂等不至于造成產(chǎn)品安全隱患及不會(huì)影響生產(chǎn)正常進(jìn)行的情況,可在下班后進(jìn)行更換維修。If the lights stop working but not broken and could not cause risks to the food and could not interfere the processing, they could be changed after the shift.如玻璃、塑料損壞而未爆裂,但已影響生產(chǎn)的正常
50、進(jìn)行,應(yīng)由維修人員迅速更換維修,此時(shí)應(yīng)留出充分的維修區(qū)域進(jìn)行維修,以免在維修時(shí)可能對(duì)產(chǎn)品的污染。修復(fù)后,該區(qū)域應(yīng)按SSOP要求進(jìn)行清掃、消毒,檢查合格后方可投入生產(chǎn)。If the glassware or duroplasts are damaged and not broken but interferes the processing, they should be maintained by the maintenance engineers. Sufficient maintenance place should be dedicated to avoid contamination
