Alcoholdehydrogenase--ADHforshort--isablankettermappliedtoalargeanddiversegroupofenzymes.Inmanycreatures,includingourselves,theyhelptoconvertalcohols,suchasethanol,intocom-poundsthatotherenzymescanbreakdownandextractenergyfrom.Butinanumberofmicroorganisms,theycanhelpthereversereaction,makingalcoholsaspartoftheprocessofextractingenergyfromsugars.

Thestarsofthesealcohol-producersaretheyeasts.NotonlydoSaccharomycesspeciesofyeastchurnoutoodlesofethanol,theycanalsotoleratefarhigherconcentrationsofitthanothermicroorganisms.Brewer'syeastowesthisabilitytotwoalcoholdehydrogenases:ADH1,whichmakesethanol,andADH2,whichbreaksitdownforuseasanenergysource.Yeastnotonlybrewsitsownmoonshine,itconsumesittoo—"tothelastdrop",asBennersays.
