引言

“德山大曲釀造技藝”起源于距今7000—9000年的澧縣城頭山。城頭山人所創(chuàng)造的釀酒技藝從富

饒的澧水流域經(jīng)浩瀚的洞庭湖輾轉(zhuǎn)流傳到沅水流域,并在桃源縣落地生根,發(fā)揚(yáng)光大,形成為自北魏至

宋代史不絕書的武陵桃源酒法。唐代,沅水流域的漢壽毛家灘李氏釀酒作坊采用“古法釀造、量質(zhì)接酒、

分級(jí)裝壇、多年貯存”的方式釀酒,所產(chǎn)“鏡面酒”、“堆花酒”在宋代曾被欽定為貢酒。后來李氏釀酒

技藝流傳到位于常德城東門外水府廟的馬萬隆糟坊,從清朝到民國(guó),經(jīng)過五代相傳與發(fā)展,成為常德正

宗古法釀酒技藝之集大成者。

1952年以馬萬隆糟坊為基礎(chǔ)成立的德山酒廠采用該項(xiàng)技藝釀造出窖香突出、爽凈柔順的濃香型白

酒“德山大曲”獲得成功,并在1963年、1984年、1988年三次全國(guó)評(píng)酒會(huì)上獲得銀質(zhì)獎(jiǎng)。至此,“德

山大曲”聲譽(yù)日隆,被譽(yù)為“瀟湘第一濃香酒”,也是常德地區(qū)最富特色的白酒產(chǎn)品之一。

本文件規(guī)定了德山大曲的保護(hù)范圍、原輔料要求、加工要求、質(zhì)量要求、檢驗(yàn)方法、檢驗(yàn)規(guī)則、標(biāo)

志、標(biāo)簽、包裝、運(yùn)輸和貯存的要求。

本文件適用于地理標(biāo)志產(chǎn)品德山大曲白酒的生產(chǎn)和銷售。

3術(shù)語和定義

GB/T15109界定的以及下列術(shù)語和定義適用于本文件。

3.1

德山大曲DeshanDaqu

在規(guī)定的保護(hù)范圍內(nèi),以當(dāng)年出產(chǎn)高粱、小麥、糯米、大米、玉米為原料,經(jīng)粉碎、潤(rùn)料、混蒸

混燒、攤涼下曲、入池發(fā)酵、再混蒸混燒、分級(jí)裝壇、貯存勾兌而成的具有窖香突出、爽凈柔順的濃香

型白酒。

湖南省常德經(jīng)濟(jì)技術(shù)開發(fā)區(qū)德山街道辦事處、樟木橋街道辦事處和石門橋鎮(zhèn)現(xiàn)轄行政區(qū)域。(詳見

附錄A)

5原輔料要求

5.1高粱

當(dāng)年出產(chǎn),符合GB/T8231規(guī)定的優(yōu)質(zhì)紅高粱。

5.2小麥

當(dāng)年出產(chǎn),符合GB1351規(guī)定的軟質(zhì)小麥。

5.3大米、糯米

當(dāng)年出產(chǎn),符合GB/T1354規(guī)定的優(yōu)質(zhì)大米、糯米。

5.4玉米

當(dāng)年出產(chǎn),符合GB1353規(guī)定的優(yōu)質(zhì)玉米

5.5曲塊

當(dāng)年出產(chǎn),符合QB/T4259規(guī)定。

5.6釀造用水

取自保護(hù)區(qū)域內(nèi)的地下水、山泉水和江河飲用水等天然優(yōu)質(zhì)水,水質(zhì)應(yīng)符合GB5749的規(guī)定。

5.7加漿用水

取自保護(hù)區(qū)域內(nèi)的地下水、山泉水和江河飲用水等天然優(yōu)質(zhì)水,pH6.5~7.0,總硬度70ppm~

90ppm,水質(zhì)應(yīng)符合GB5749的規(guī)定。

5.8粗殼

當(dāng)年生產(chǎn),谷黃色,無霉變、異味,水分≤14%。

6加工要求

6.1工藝流程

原料→粉碎→潤(rùn)料→混料蒸酒→攤涼→下曲發(fā)酵→貯存→勾兌(勾調(diào))→灌裝→產(chǎn)品。

6.2關(guān)鍵工藝要求

6.2.1原料

原料粉碎不宜太細(xì),通過0.85mm(過濾篩)的量≥85%;粗殼預(yù)蒸最少保持30min,蒸透,無雜味。

6.2.2混料蒸酒

酒糟和原料進(jìn)行拌和,要求拌散、和勻、無疙瘩、無灰包,拌好堆置30min后開始上甑蒸酒,接

酒時(shí),酒精度控制在60%vol以上,流酒溫度控制在30℃以下,流速為2kg/min~3kg/min。

6.2.3攤涼

將蒸好的糧糟置于晾糟床上,翻動(dòng)2次~3次,并用鼓風(fēng)機(jī)將糧糟溫度吹冷至21℃~25℃。

6.2.4下曲發(fā)酵

采用固態(tài)發(fā)酵法,下曲溫度控制在21℃~25℃,入池溫度控制在16℃~21℃,發(fā)酵周期為45

天~90天。再進(jìn)行混料蒸酒。

6.2.5貯存

將蒸出來的酒貯存于地下酒窖的陶壇中,地下酒窖溫度控制在30℃以下,相對(duì)濕度控制在75%左

右,貯存時(shí)間≥3年。將此酒作為勾兌用的基酒。

6.2.6勾兌(勾調(diào))

貯存時(shí)間≥3年以上,各種等級(jí)和口感風(fēng)格的基酒,先進(jìn)行小樣勾兌(勾調(diào)),小樣口感、理化指

標(biāo)符合要求后按小樣比列勾兌(勾調(diào))大樣。大樣理化指標(biāo)檢驗(yàn)合格后,封存罐儲(chǔ)1個(gè)月。

6.2.7灌裝

將罐儲(chǔ)1個(gè)月的酒體送檢,檢驗(yàn)合格后方能灌裝出廠。

6.3生產(chǎn)加工的衛(wèi)生要求

生產(chǎn)過程衛(wèi)生應(yīng)符合GB8951規(guī)定。

7質(zhì)量要求

7.1感官要求

感官要求應(yīng)符合表1的規(guī)定。

注:當(dāng)酒的溫度低于10℃時(shí),允許出現(xiàn)白色絮狀沉淀物質(zhì)或失光。10℃以上時(shí)應(yīng)逐漸恢復(fù)正常。

7.2理化指標(biāo)

理化指標(biāo)應(yīng)符合表2的規(guī)定。

7.4凈含量

應(yīng)符合國(guó)家質(zhì)量監(jiān)督檢驗(yàn)檢疫總局令【2005】第75號(hào)《定量包裝商品計(jì)量監(jiān)督管理辦法》的規(guī)定。

8檢驗(yàn)方法

8.1感官要求

按GB/T10345—2007第5章的規(guī)定執(zhí)行。

8.2酒精度

按GB5009.225的規(guī)定執(zhí)行。

8.3總酸

按GB12456的規(guī)定執(zhí)行。

8.4總酯

按GB/T10345—2007第8章的規(guī)定執(zhí)行。

8.5己酸乙酯

按GB/T10345—2007的第11章規(guī)定執(zhí)行

8.6固形物

按GB/T10345—2007第9章的規(guī)定執(zhí)行。

8.7安全要求

按GB2757的規(guī)定的檢驗(yàn)方法執(zhí)行。

8.8凈含量

按JJF1070的規(guī)定執(zhí)行。

9檢驗(yàn)規(guī)則

9.1組批

同一原料、同一生產(chǎn)線、同一品種、同一生產(chǎn)日期為一個(gè)檢驗(yàn)批次。

9.2抽樣方法

9.2.1按表3抽取樣本,從每箱中任取一瓶,單瓶包裝凈含量<500ml,總?cè)恿浚?500ml時(shí),可

按比例增加抽樣量。

9.2.2采樣后應(yīng)立即貼上標(biāo)簽,注明:樣品名稱、品種規(guī)格、數(shù)量、制造者名稱、采樣時(shí)間與地點(diǎn)、

采樣人。將樣品分為兩份,一份樣品封存,保留(2年)備查。另一份樣品立即送化驗(yàn)室進(jìn)行感官、

理化檢驗(yàn)。

9.3出廠檢驗(yàn)

9.3.1每批產(chǎn)品應(yīng)經(jīng)生產(chǎn)企業(yè)質(zhì)量部門檢驗(yàn),檢驗(yàn)合格后方能出廠。

9.3.2出廠檢驗(yàn)項(xiàng)目為:感官、酒精度、總酸、總酯、己酸乙酯、固形物、凈含量。

9.4型式檢驗(yàn)

型式檢驗(yàn)內(nèi)容包含本文件規(guī)定的全部?jī)?nèi)容,每年應(yīng)進(jìn)行一次,有下列情形之一者應(yīng)進(jìn)行型式檢驗(yàn):

a)申請(qǐng)使用地理標(biāo)志產(chǎn)品保護(hù)專用標(biāo)志時(shí);

b)更換關(guān)鍵生產(chǎn)設(shè)備時(shí);

c)停產(chǎn)3個(gè)月后,重新恢復(fù)生產(chǎn)時(shí);

d)出廠檢驗(yàn)與上次型式檢驗(yàn)結(jié)果有較大差異時(shí);

e)產(chǎn)品監(jiān)督管理機(jī)構(gòu)提出要求時(shí)。

9.5判定規(guī)則

9.5.1產(chǎn)品檢驗(yàn)項(xiàng)目全部符合本文件要求時(shí),判定為合格品。

9.5.2產(chǎn)品檢驗(yàn)項(xiàng)目中如有一項(xiàng)或一項(xiàng)以上不符合本文件要求時(shí),應(yīng)在該批次產(chǎn)品留樣中取樣復(fù)檢。

復(fù)檢結(jié)果符合本文件要求,判定為合格品,復(fù)檢結(jié)果仍不符合文件要求,判定為不合格品。

10.1標(biāo)志、標(biāo)簽

應(yīng)符合GB2757、GB7718和GB/T17924的有關(guān)規(guī)定。地理標(biāo)志專用標(biāo)志應(yīng)符合地理標(biāo)志專用標(biāo)志

使用管理相關(guān)規(guī)定。

10.2包裝

應(yīng)符合GB31621、GB/T10346的規(guī)定。

10.3運(yùn)輸

應(yīng)符合GB31621、GB/T10346的規(guī)定。

10.4貯存

應(yīng)符合GB31621、GB/T10346的規(guī)定。
