7、e food culture with a long history is praised and loved by Chinese and foreign friends. The translation of food from Chinese into English is very important, because the translation should reflect not only its inside meaning but also the art and the cultural connotation. However, it is not easy work.

8、 Chinese dishes have a very rich culture and local characteristics, so the translation plays a unique role in food cultural exchanges. Chinese dishes have been divided into a variety of cooking methods, therefore, they have different feature. In this article, some translation methods of cooking such

9、 as stewed, fried, roast and steamed, are discussed. China is a country which is very particular about Chinese dishes. Chinese have have thousands of history. Since ancient times, people regart the'

12、 dishes 'as a matter of importance, food culture is an important part of traditional culture. Chinese food has a deep cultural connotation, dishes named is an art. Because of the great differences between English and Chinese, in most cases when people translate the Chinese dishes into English, i

13、t should as far as possible translate the dishes cooking methods and materials. So people can understand fully at one glance. Cooking process of Chinese dishes is very complex. If people we want to translate Chinese dishes into English dishes properly and accurately, it is also necessary to know the

14、 process of cooking and to study some basic materials of dishes. The content of Chinese dishes translation is which kind of cooking method the dishes use and what the dishes materials are.With the continuous development and communication of Chinese food culture, more and more people are concerned ab

15、out translation of Chinese dishes from Chinese into English. However, at this stage, the English translation of Chinese dishes can not make people satisfied. Chinese dishes have a variety of cooking methods, such as boiled, stewed, fried, deep fried, baked, roast, steamed, smoked, etc. In this artic

16、le, some translation methods of Chinese cooking such as 燉,炒,烤 and 蒸, are discussed. The purpose of this article is that the readers can understand how to translate Chinese dishes and cooking methods. Thus, this article is the writers opinion about the translation of Chinese dishes cooking methods fr

17、om Chinese into English.11 The Translation of Chinese Cooking Method: “燉”燉 is characterized by the food placed in the cooking water, then heated, so food becomes cooked. Chinese dishes are famous for delicious, beautiful and model. 燉dish is an essential meal on China's table ,it can reflect that

18、 the owner is hospitable. Chinese people pay attention to courtesy, so the food culture is also one of the important parts. English translation of 燉 consists mainly of two ways: stewed and braised. English translation of 燉 dishes: there are four main methods: 1.1 Cooking Method+ Ingredients( Shape )

27、ds of expression-stewed and braised. We need to memorize two translations methods.2 The Translation of Chinese Cooking Method: “炒”炒 is not cooked with water, only oil. Oil is placed in the pan, add heat to the food cooked, we use basic heating. English translation of 炒has two main methods : fried an

28、d sauté. Fried is a kind of general method, however, there are some special circumstances, the English translation of "炒蛋" is “Scrambled Egg”, not “fried Egg”. The second one, sauté is a word from France. In fact, English is also willling to bring new dishes and translations meth

29、od. It is now also widely used in the English dishes. The real food culture should be willing to absorb many culture, and it can be accepted by the public. In peoples life, the problem of the dishes translation mainly is 炒菜, such as: 紅燒獅子頭,麻婆豆腐,魚香肉絲, etc. So people need to master the basic method of translation, who are c

41、areful to study knowledge work of literal translation and transliteration. On the basic we should master knowledge and content of Chinese dishes , then do the translations work.3 The translation of Chinese Cooking Method: “烤”烤 is that food contact with open fire in directly or burning on the hob(鐵架)

42、, or placed in the oven baking(烤箱). 烤 food is long, early period in the Yellow Emperor, people had started to use the system of 烤 food. It is the first way to do cooked food. Until now, it has been loved by the people. As we know 北京烤鴨, its English translation is:Roasted Beijing duck, which has been

43、officially incorporated(編入) into American English Dictionary. Thus, the dishes culture has a strong link all the world. When a kind of translation get recognition, it not only can produce its right translation, but also enhance its popularity. It contributes to spread and develop of Chinese food cul
