culturesarebroad,profoundandwell-established.Inthesedays,withtheexchangeswithothercountriesbecomingmoreandmorecontinual,moreandmoreforeignerstrytoknowandenjoyChinesefood.NotonlyisthetranslationofthenamesofforeignChineserestaurantsconfused,butalsothetranslationofthenamesoflocalrestaurantsarenoteveninthesamelevel.Therefore,accurateandappropriateEnglishtranslationoftheChinesemenusbecomeveryimportant.However,thebiggestproblemintheEnglishtranslationofChinesemenusisthedisordereduseoftranslatednames,whichisratherrandomintranslationandfailstoformaunifiedandstandardizedtranslationmethodandtheuseprincipleofspecialnames.Differenttranslatorswithdifferenttheoreticallevel,differentpracticalexperienceanddifferenttranslationpurposeshavedifferenttranslationmethodsfordishnames,whichwillinevitablyleadtotheproliferationoftranslatednames.“ThepresentachievementsthathavebeenmadeinthetranslationofChinesemenuarefarfrombeingenough.Comparedwiththeliterarytranslation,Chinesemenutranslationresearchesbeganatarelativelylateageandlayfarbehind.Currently,manyurgentproblemsexistinthisfield,suchasthelackofstandardizationofmenutranslation,incorrecttransferenceofcultureinformationandthelackofaguidingtranslationtheory.”(李解,全敏.2017.P119)2.1.1MessageBeingInaccurateThefirstistheincorrectuseofpartsofspeech.Forexample,insomerestaurantsyoutranslate“童子雞”into“chickenwithoutsex”.Obviouslyyoushouldreplace“nosex”and“spring”,sothecorrectansweris“springchicken”.Ontheotherhand,whenthetranslatorisnotclearaboutthemeaningofthedishesnames,aslongasalittlemorerigorous,querysomeinformation,determineitsusage,iscompletelyavoidable.Thetrueinterpretationisasophisticatedandrigorousprocedure,whichneedsahighstandardofcapacity.Itrequiresthetranslatornotonlytohaveaclearunderstandingofthethemeoftheoriginaltext,haveavalidcomprehensionofthewordsintheprimaryarticle,onlyalsotobeinapositiontoshowthemeaningoftheprimaryarticlereasonablyinanotherlinguisticcommunication.Intheprocedureofinterpretation,howtocopewithdifferentmessage,howtoassumesolutionsandwhatwordsaremoreaccurate.Allthisrequirestheinterpretertothinkaloneandpondercarefully.Iftheseissuesarenotprocesseddecently,theywillmaybebearonthetranslationresult.Translationisauniqueskill.Justlikeotherarts,weneedtoputalotofeffortintoit,studytranslationtheoriesandstudytranslationskillsindepthtotrulygrasptheessenceoftranslation.2.1.2CulturalDepositsBeingLostIntheprocessoftranslation,theconnotationoftraditionalChineseculturesareexcessivelyerased.Chinahasalonghistoryandculture,manyethnicgroups,differentcustoms,cookingtechnologyafteralonghistoryofevolution,differentregionshaveformedauniquecuisine.Inthesecuisines,thenamesofdishesareverycomplex,andwithastrongculturalconnotation.Namingdishesafterhistoricalfigures,animals,solartermsandplacenamesisafeatureofChinesefoodculture.Thetranslationofthiskindofdishesnamesoftenhavegreatproblems,whichmakesitdifficultforthereadersofthetranslatedversiontogetthesamefeelingasthereadersoftheoriginaltext.Moreover,thetranslatednamesoftenfailtofullyreflecttheculturalconnotationandartisticbeautyoftheoriginalnames.ThemostdirectwayistotranslateChinesenamesintoEnglish,forinstance,insomerestaurantstranslate“四喜丸子”into“Fourgladmeatballs”,Obviouslyyoushouldreplace“Fourglad”with“braisedporkballs”,sothecorrectansweris“braisedporkballsingravy”,and“夫妻肺片”translateinto“Husbandandwife’slungslice”,Exaggeratedandillogicaltranslationlikethisdoesnotonlydiscouragepeoplewhoorderfoodfromtrying.Itisnoteasytomastertheskillsoftranslation.ThisisbecausetheChinese-Englishtranslationwillencounterallkindsofdifficulties.First,theChinesemeaningisdifficulttounderstand.Duetothegreatdifferencesbetweenthetwocountriesinhistory,foodcultureandcustoms,aChinesesentenceisusuallyunderstandabletoChinesepeople,whileitisillogicalandincomprehensibletoforeigners.Second,itisdifficulttoexpressinChinese.Sometimes,inordertofindasuitableequivalentwordinChinese-Englishtranslation,theculturalconnotationisoftenlost,andtheresultoftranslationisquiteordinary.Inaddition,thetranslationofChinesemenusintoEnglishrequiresalotofculturalknowledgeandtranslationskills,becausethenamewetranslatemayinvolvethefieldoftraditionalChineseculture,notjustaname.Mostoftheseknowledgeareasareculturalconnotationsthatwearenotfamiliarwith.IfwedonothavethecorrespondingknowledgeoftraditionalChinesecultures,someerrorsorjokesintranslationwillinevitablyoccur.BecauseofsomanydifficultieswhentranslatedfromChinesetoEnglish.So,wemustreadbooksasmuchaspossible,inEnglishandChinesepracticeofthecharacteristicsoftwodifferentlanguagesandcultures,toavoidsomewrongtranslationerrors,andtheexpressionoflawwillregulatethepresentsituationofChinesemenutranslationhasbeenlostinthetranslationprocesstoavoidthecultures.2.2TheProblemsofChineseMenusTranslation“ThecurrentcaseofChinesemenutranslationisnegative,shortofapplicablecommonlevelandvalidtheoreticalguidance,AlthoughafterthreedecadesofChina’sreformandopeningup,somestudiesoftheChinesemenutranslationconductedbyscholarsfromdifferentperspectives,therelatedpublishedworksinEnglishar
