53、沖洗干凈，防止污染食品， 保護(hù)設(shè)備。5.4 車間衛(wèi)生5.4.1 清洗、消毒要求5.4.1.1長期停產(chǎn)后恢復(fù)生產(chǎn)時(shí)必須對所有的設(shè)備、工器具及相連管路等按要求進(jìn)行全面的清洗， 清洗完畢后由檢查科檢查簽字后方可正式生產(chǎn)，如有問題耽誤生產(chǎn)個(gè)人或部門將負(fù)全責(zé)。5.4.1.2長期停產(chǎn)后恢復(fù)生產(chǎn)時(shí)對所有接觸果汁設(shè)備進(jìn)行清洗，去除銹斑、污垢。首先用 2% 熱堿水循環(huán) 30 分鐘，浸泡，以90100熱水沖洗，至ph=7后再用1.52%稀硝酸沖洗 30 分鐘，之后用熱水沖洗循環(huán)干凈。 檢驗(yàn)熱沖洗水的 ph達(dá)到7 時(shí)，方可生產(chǎn)5.4.1.3每班生產(chǎn)結(jié)束后用90100純凈水把設(shè)備及相連管道清洗干凈，再用2%90 熱堿

54、水循環(huán) 30 分鐘，之后用 90左右的純凈水沖洗干凈，沖洗至ph達(dá)到 7 時(shí)，方可下班。5.4.1.4每班生產(chǎn)前須用90純凈水清洗消毒設(shè)備及相連管路1 次5.4.1.5車間衛(wèi)生每班交班前打掃，用自來水沖洗地面，并不間斷隨時(shí)清洗。5.4.1.6交班前把設(shè)備污染處清掃干凈。5.4.1.7工作鞋必須在消毒池中消毒，清毒池內(nèi)消毒液每日更換1 次，清毒液為200ppm naclo，加入量為池 2/3 處。5.4.1.8車間空氣消毒每天用50ppm naclo噴灑 1 次。5.4.1.9洗手遵守五步程序：清水皂液清水干手消毒液消毒5.4.1.10污水池、廁所每周用200ppm naclo沖涮或噴灑。5.4
