ResearchersattheEarthSystemScienceInterdisciplinaryCenter(ESSIC)identifiedtheBeringSeainthenorthernPacificOceanasaclimatechangehotspot,showinghowenvironmentalchangestherethreatenthecoastalcommunitiesandecosystems.
Theresearchteamfoundthatinnineofthelast10winters,seaiceextentwaslowerthanaverage,includingrecordlowsin2018and2019.Duringthisperiodofseaiceloss,windspeedsandwaveheightsincreased.“IntheBeringSea,seaiceactsbothtomitigatewavesastheyhittheedgeoftheicecover,andalsotolimitthetransferofenergyfromwindsintotheoceanfromwhichwavesaregenerated.Inturn,windsandwavescanbreakupseaiceintosmallerpiecesattheiceedge,”saidtheresearchers.“Lessseaicemeanslessprotectionforcoastalcommunities,”theysaid.“Ifseaicecontinuestodeclinehere,thenwewouldexpectthattheextremewaveswehavealreadyobservedwithoursatellitedatawouldhaveabiggerimpactoncoastalcommunities,”saidco-authorAssociateProfessorSineadFarrell.
SeaiceisexpectedtocontinuedecliningastheEarthwarms;bythe2040s,scientistsexpectseaiceextentintheBeringSeatoregularlydipbelowtherecordlowsetin2018.TheBeringSeaiceseasonisalsoexpectedtodecreasebyuptoafulldayperyearthrough2044.Thistransitionwillbringunpredictableeffectstotheregionanditspeople.

LedbyEllenKuhl,professorofmechanicalengineeringandseniorauthorofthestudy,theStanfordteamranathree-dimensionalfoodtest.Theytestedeighttypesoffood,suchashotdogs,turkey,sausagesandsoon,eachincludingbothanimal-basedandplant-basedoptions.Theymountedbitsofmeatintoamachinethatpulled,pushed,andcutonthesamples.“Thesethreeloadingmodesrepresentwhatyoudowhenyouchew,”saidKuhl.
Then,theyusedmachinelearningtoprocessthedatafromthesetests:Theydesignedanewtypeofneuralnetworkthattakestherawdatafromthetestsandproducesequations(方程)thatexplainthequalitiesofthemeats.Toseeiftheseequationscanexplaintheperceptionoftexture,theteamcarriedoutatestsurvey.Thetesters—whofirstcompletedsurveysontheiropennesstonewfoodsandtheirattachmenttomeat—atesamplesoftheeightproductsandratedthemfor12categories,suchassoft,hard,andmeat-like.
Inthemechanicaltesting,theplant-basedhotdogandsausagebehavedverysimilarlytotheiranimalcounterparts(對應物)inthetests,andshowedsimilarhardness.Meanwhile,theplant-basedturkeywastwiceashardasanimalturkey.Strikingly,thehumantestersalsorankedthehardnessofthehotdogsandsausagesverysimilarlytothemechanicaltests.“What'sreallycoolisthattherankingofthepeoplewasalmostidenticaltotherankingofthemachine,”saidKuhl.
