13、選用含銅量低的食物原料,以減少銅在體內(nèi)的蓄積。附表僅列出常用食物含銅量,表中數(shù)據(jù)來源于中國食物成分表(2002)中國食物成分表(全國分省值及肝豆狀核變性等有關(guān)圖書資料,供肝豆狀核變性患者及家屬初步參考。有條件者還可以進一步參閱中國食物成分表(全國分省值,結(jié)合食物生產(chǎn)地和食物含水量等因素,綜合分析判斷選用含銅量低的食物原料。2.一般干燥食物含銅量0.5mg/100g的禁食,而新鮮含水量高的食物含銅量0.13mg/100g的禁食。食品原料建議主要選用精白米、特一粉或富強粉、鮮牛奶、雞蛋白、淡水魚、淺色蔬菜、淺色水果、色拉油及純凈水或蒸餾水等。銅的攝入量除了和原料的含銅量有關(guān)外,也和飲食的多少直接有

14、關(guān),即進食越多則攝入越多。3.禁食動物內(nèi)臟和血、蝦蟹類、貝類、軟體動物、龜鱉類、豆類及其制品、干果、堅果類、真菌類(香菇等)、藻類(紫菜等)、野菜及深色蔬菜,禁食含銅量高的中西藥(如蜈蚣、全蝎、僵蠶、龍骨、牡蠣及蜂產(chǎn)品)。脫水蔬菜及咸蔬菜要少食。醬油等調(diào)味品和香料一般含銅偏高,可用少許調(diào)味而不能直接大量食用。豬油和肥肉盡管含銅量不太高,但是因為其為飽和脂肪酸且含有較高膽固醇,本病患者也不宜食用。4.禁止使用銅制的餐具和炊具,瓜果一定要去皮食用,(表皮含銅量高且可能殘留農(nóng)藥)盡量食用天然食物,少食加工后的成品食物(因含太多不利于健康的防腐劑、色素、香精等添加劑,且加工設(shè)備可能含有銅制零部件)5.
